I’m all about a lime and cucumber Tom Collins with Hendricks. 50ml gin, 1cm of cucumber (skin removed) and pulverised in a pestle and mortar with the juice of 1 lime and 1tsp of sugar. Pour into a tall glass and top off with soda water and slices of fresh lime. So perfect on a summer evening!
I really hope you love Daffy’s as much as I do, I’m sure you could make it into a completely acceptable brunch drink!
